The Kentucky Distillery adds seared French Oak staves to the barrel, and then ages it a bit longer only in winter, when bourbon matures more slowly. The result is a bolder, more complex whisky. Nose: Hints of wood staves, caramel and sweetness. Palate: Very intense flavours; a big crescendo of wood blending perfectly with deep, complex and rich
