although this depends on the vintage and the quantity of water over the winter (recovering of the vines after the production cycle)

De Fermo "Don Carlino" Pecorino 2023 Style:White Length of aging before bottling:100% Pecorino. From certified biodynamic estate vines planted on very sandy, calcareous clay. The wine goes through malolactic fermentation and is aged in botti for 9 12 months. It is bottled withouth fining, filtration or additional sulfur (applied sparingly only during racking). Immensely fresh and intense on the nose, aromas of apple, dried chamomile, sea spray and lime zest kick off this wine.
